National Nutrition Month

March is National Nutrition Month, a day created by The American Dietetic Association more than 30 years ago to focus attention on the importance of making informed food choices and developing sound eating and physical activity habits.

Among the important ingredients adults should include in their diet are Omega 3 fatty acids (found in salmon, sardines, and similar), B vitamins, calcium, fiber, probiotics (found in yogurt), vitamin c, and vitamin D.

Below is a recipe for Layered broccoli salad, courtesy of the people at Cabot’s Creamery, the Vermont cooperative that makes “The World’s Best Cheddar,” among other products.

Layered Broccoli Salad

6 cups chopped broccoli florets
1 small red onion, very thinly sliced
2/3 cup dried sweetened cranberries or raisins
1/2 cup plain nonfat yogurt
3 tablespoons honey
2 tablespoons mayonnaise
2 tablespoons cider vinegar
1-1/2 cups grated Cabot 50% Reduced Fat Cheddar (6 ounces)
1/4 cup unsalted dry-roasted hulled sunflower seeds or chopped walnuts
1 ounce (2 tablespoons) 50% less-fat bacon pieces

In large glass serving bowl, arrange layers of broccoli, onion and cranberries.

In small bowl, whisk together yogurt, honey, mayonnaise and vinegar. Drizzle dressing over layered salad.

Sprinkle cheese evenly on top. Cover and refrigerate until ready to serve.

Just before serving, sprinkle with sunflower seeds or walnuts and bacon pieces.

Makes six servings and promotes heart, bone and intestinal health and supports a healthy immune system.
