Christmas Cocktails: P.I.N.K Pumpkin Pie Tini
As we continue our Christmas in July celebration, the folks at P.I.N.K, the premium vodka from Holland, were kind enough to share this recipe for a pumpkin pie martini. Don’t think that you have to wait ’til December to try it.
P.I.N.K. Pumpkin Pie Tini
2 oz p.i.n.k. vodka
2 oz ready-made pumpkin pie filling
1 oz half & half cream
1 oz spiced rum
pinch of nutmeg
splash of vanilla extract
Combine ingredients over ice and shake well. Pour into a well-chilled martini glass. Garnish with a dollop of fresh whipped cream dusted lightly with nutmeg.

What a very different idea. Since I don’t drink rum or vodka, could I make it with ginger ale or something else fizzy?

Hi Mary Emma:
I’m not sure that I’d introduce fizzy into the mix. Maybe a white grape juice. All you really want to do is cut the richness of the pie filling a little.
